Kabuli Rice: Recipe shared by Bharti Sanghi

Recipe Ingredients


DRY fruits
1 Almonds-soak in a water and remove skin
2 kaju-pcs
3 kishmish whole
 

For the  Aroma
1 saffron –soak  in milk
2 kewra water

Khada Garam masala
1. shahi zeera
2. Tej Patta
3. Big elaichi
4. laung
5. Dal chini (little)
6. kali mirch (whole)
7. ginger paste
8.khus khus paste.
9. Masala for gravy.
10. Potato cube and fried
11. Onion rings and fried
12. Cauliflower pieces and fried
13. Peas – just boiled
14. Bread cubes and fried.

Preparation

Soak the rice for half an hour then boil but not fully and put some garam masla+salt in the rice while boiling. And after that drain the rice and spread on thali and cool a little.and then we take curd, haldi, mirch, dhaniya, salt little aam choor, sookha pudina and make a paste. Then add ghee in a kadhai and warm it then add garlic paste onion paste after it is brown add ginger paste khas khas paste and cook well until the dahi is separated. Then add half a glass warm water and boil further. Add fried bread pcs. And take off the fire and layer the rice with dry fruits fry vegetables and the gravy and saffron mixture. Keep layering until the rice on the top then cover the entire thing with the thali so that steam doesn’t escape cook for slow fire for forty five minutes
